Residues of the world's oldest wine. Pottery jar fragment with residues (black) of the world's oldest wine. The fragment has been labelled by the archaeologists who found it. The fragment came from one of six jars found at Hajji Firuz Tepe, Iran, in the kitchen of a 7000-year-old mudbrick building. Different chemical tests on this fragment at the University of Pennsylvania Museum revealed evidence of tartaric acid, a substance found in large quantities in grapes in another jar. The residue also contained residues of terebinth resin, a substance added to the wine as a preservative. This fragment is 2000 years older than any other archaeological evidence for wine.
