A fresh egg is placed in dilute acetic acid. The acid reacts with the CaCO3 of the shell but leaves the egg's membrane intact. If the egg, with its shell removed, is placed in pure water, the egg swells. Placed in a concentrated sugar solution, the egg shrivels.
