Fresh taro root (Colocasia esculenta) was fractured and examined in its hydrated state by environmental SEM to show the positions of starch grains in the root cells. Neither drying nor gold coating was used. Eddo is a food staple in African, Oceanic and South Indian cultures and is believed to have been one of the earliest cultivated plants for edible starchy corms and as a leaf vegetable. Enhanced ESEM.
