Teff, or taf (Eragrostis tef) is an annual grass, a species of lovegrass native to the northern Ethiopian Highlands of northeastern Africa. The grains are high in dietary fiber and iron and provide protein and calcium. They have a sour taste, are similar to millet and quinoa in cooking, but are much smaller. Teff is an important food grain in Ethiopia and Eritrea, where it is used to make injera, and less so in India and Australia. It is now grown in the USA, in Idaho in particular. Teff is adapted to environments ranging from drought stress to waterlogged soil conditions. Enhanced SEM. Image width: 2.14 mm. Magnification: 47x if the image is printed 10 cm wide. Bar: 500 micrometers (0.5 mm).
