They typically have a single tap root and are usually orange, the colour being due to the presence of beta-carotene, which on consumption by humans is metabolized into vitamin A. They are also a rich source of fibre and vitamins C, K, and B8 as well as folate, potassium, iron and panotheric acid. Magnification: x8.3 at 10cm wide.
