Souma- is a traditional drink made from figs. In August the figs are dried on the roofs of the mastica villages to dry. They are left to ferment; till the end of October. Then the figs are boiled in a traditional distiller; similar to the ones they use to make ouzo or raki [moonshine]. As potent as souma is (probably about 45% alcohol) if you continue the process and distil it again you get metapsima which is even more potent. Like ouzo; souma will turn white with water added. Souma is to the people of Chios and drink throughout the day and at all festivals; weddings and every other social occasion.In the walls of an old medieval castle on the out-skirts of Asia Minor the traditional Souma Drink is being made. it is the month of November time to make Souma Souma is pure distilled spirits from figs.IN THE PHOTO: LOCAL DISTILLER going home with the booze sfter three months in fermentation the figs are ready to give alcohol
