Les Halles in the morning in Rue Rambuteau. The watercress sellers are with their baskets outside the Meat Pavilion, Baltard pavilion number 3, in their designated area of the carreau forain. The empty baskets are going to be taken away and are awaiting collection to be reused. A meat porter - one of the elite "forts des Halles" - is in front of the meat wagon balancing a carcass on his head. He is holding it with one hand and is clutching a towel to prevent more blood from dripping over his already bloodstained overall. Photographer Harold Chapman recalls the porter "pausing to stare at me before loading the meat from the barrow into the meat lorry." The meat had been purchased. Tied on to a rail on the side of the meat trolley are some rags or old towels, much used by the meat porters for wiping off blood.
