Les Halles in the morning outside Baltard pavilion number 3, the meat pavilion (le pavillon de la viande), in rue Rambuteau. Passing by an open meat lorry is a lady fashionably dressed on her way to work. People would use the market as a short cut. The meat lorry is parked by the entrance to the covered through road that links the pavilions. A temperature controlled refrigerated trailer is parked just inside the covered road. In the background are some watercress baskets the contents of which are due to be destroyed as there were no buyers for them. Photographer Harold Chapman recalls... "You can put a watercress basket up for sale and the buyer come and look at it and think it's so awful he wouldn't put it in the restaurant. The restaurant buyers are searching for quality."
