Amylase enzyme. Molecular model of the enzyme alpha-amylase, found in the human body in places in fluids such as saliva and in the pancreas. Amylase catalyses the breakdown of starch to sugars, and so starts the digestive process. This example is from the thermophilic fungus Malbranchea cinnamomea.
