Sprouting potato. View of a sprouting potato, Solanum tuberosum. The potato is a native of the high valleys of Mexico, Peru and Chile, and was introduced to Europe in about 1565. It is now one of the most important temperate food crops. The leaves, stem and fruit of S. tuberosum contain a poisonous alkaloid, solanin. Although traces of this appear in the edible tubers, it is destroyed during cooking.
