Roquefort cheese. This is a French soft cheese originating from the Roquefort-sur-Soulzon region. It is made from cow's milk and it is ripened in limestone caves using the mould Penicillium roquefortii to produce the blue-green marbling. Cheese is a good source of calcium, but contains high levels of fat.
